Vegan Rainbow Tarte

What you will need for 6 servings

For the dough

  • 750 g flour
  • 1 pinch of salt 
  • 375 ml water
  • 6 tablespoons oil

For the Topping

  • 3 cups vegan crème fraîche (450 g)
  • 3 bell peppers
  • 1 can of corn
  • 1 jar of olive slices
  • 6 onions 

Method:

Step 1- The dough

  • Put the flour, salt, water and oil in a large bowl.
  • Now make the dough. Just start with one hand, when the dough is already taking shape, just keep kneading with both hands until you get a smooth dough. 

Step 2- The topping 

  • Wash the vegetables and cut them into small cubes.
  • In a separate bowl, mix the vegan crème fraîche with salt and a little pepper and season to taste.

Step 3- Roll out, spread and top

  • Preheat the oven to 220°C.
  • Divide your dough into 3 equal pieces.
  • Take one of the dough pieces and roll it out on a floured surface with the help of the rolling pin until it is about the size that will fit on your baking tray.
  • Place the dough on the baking sheet lined with parchment paper and poke it with a fork in different places.
  • Now spread 1/3 of the crème fraîche on the dough (leaving a bit of border) and top with 1/3 of the vegetables.
  • Do the same for the other 2 portions of dough.

 

Step 4- Put in the oven

 

  • Bake at 220°C  for about 15 minutes or until the edges are lightly browned. 

 

 

How can you tell if a dough is "smooth"? If you knead the dough long enough (at least 15 minutes), you can quickly see that the structure of the dough is very smooth, i.e. you cannot see any "pieces" or anything else.
