What you will need for 4 servings:
Ingredients
2 leeks
2 cups (150 g each) vegan crème fraîche
salt and pepper
2 packages of fresh puff pastry
Method
Step 1-The filling
Preheat the oven to 180°C / 200°C top.
Wash the leeks, quarter them lengthwise and cut them into thin slices.
In a bowl, mix the vegan crème fraîche with the leeks and season with salt and pepper.
Step 2- Roll it
Spread half of the filling evenly on the puff pastry, leaving 2 cm free at the top edge (the long edge).
Now roll up the puff pastry from the long side and close the ends by pressing them together.
Now cut the roll into 16 slices and place the individual rolls on a baking tray lined with baking paper.
Do the same with the other puff pastry.
Step 3- Off to the oven
Bake in the oven for about 18-23 minutes or until the edges are lightly browned.
