Step 1- Preparations
- Cook the pasta according to package directions and then pour cold water over it in a colander until it itself is completely cold. Drain the pasta in the colander and set aside.
- Wash and drain the vegetables.
- Peel the carrots and cut into thin sticks and store in a bowl.
- Also slice the peppers into sticks and store in a second bowl/plate.
- Cut the leeks into half rings and set aside in a bowl along with the bean sprouts.
Step 2- Wok sauce
- Peel and finely chop 4 cloves of garlic and put them in a bowl and mix them with 2 tbsp dark soy sauce, 100 ml soy sauce, 4 tsp sugar and 1 tbsp sesame oil until the sugar dissolves.
- Now let the wok sauce sit for at least 10 min.
Step 3- Fry
- Heat the wok with 1 tbsp canola oil on high heat.
- Add the carrots and fry until they have softened a bit (about 3 min). Then add the peppers and continue to fry on high for another 3 min. After that, put them in a bowl and set aside.
- Now add 3 tbsp canola oil to the wok and heat on high.
- Add the prepared wok sauce and bring to a boil briefly.
- Add the pre-cooked noodles and stir briskly with 2 wooden spoons.
- When the sauce is completely absorbed by the noodles (about 8 minutes), add the bean sprouts and leek and mix them into the hot noodles.
- Then add the pre-cooked peppers and carrots and continue frying and stirring until they are hot as well.
Now you're done and ready to enjoy your homemade fried noodles!
