Step 1- Cook rice
- Take out the amount of rice and then put it into the pot.
- Rinse the rice with clear water until it is no longer milky, but clear.
-
Either you have a rice cooker:
- Prepare the rice in it (add about 1,5 times the amount of water to the rice) and then push the button
-
Or you have to cook the rice in the pot:
- Put the rice in a pot with the water (about 1,5 times the amount of water to the rice) and bring to a boil.
- Then stir once and turn the temperature to low and let it steam for at least 20 minutes.
- Then set the rice aside covered with a kitchen towel.
Step 2- Wok sauce
- Peel and finely chop 3 cloves of garlic and put them in a bowl and mix them with 2 tbsp dark soy sauce, 100 ml soy sauce, 4 tsp sugar and 2 tsp sesame oil until the sugar is dissolved.
- Now let the wok sauce sit for at least 10 min.
Step 3- Preparations
- Wash the vegetables and drain them.
- Peel and finely dice the carrots and store them in a bowl.
- Dice the peppers as well and store in a second bowl/plate.
- Wash and cut the leeks into quartered rings and set aside in a bowl.
- Prepare the peas according to package directions and drain.
Step 4- Off to the wok
- Heat the wok with 1 tablespoon of rapeseed oil on high heat.
- Add the carrots and fry until they have softened a bit (about 3 min). Then add the peppers and continue to fry on high for another 3 min. Then transfer to a bowl and set aside.
- Now add 4 tbsp rapeseed oil to the wok and heat on high.
- Add the prepared wok sauce and bring to a boil briefly.
- Add the precooked rice and stir briskly with 2 wooden spoons.
- Once the sauce has been completely absorbed by the rice (about 3 minutes), add the leeks and mix them into the hot rice.
- Then add the pre-cooked peppers, peas and carrots and continue sautéing and stirring until they are also hot.
- Optional: sprinkle chopped peanuts on top.
Now you're done and ready to enjoy your homemade fried rice!
