Eggplant Burger

What you will need for 4 servings

Ingredients

  • 8 tsp vegan mayonnaise
  • 1 clove of garlic
  • salt and pepper
  • 2 eggplants
  • 2 tomatoes
  • 1 smal lettuce
  • Optional: 2 avocados
  • 1 tablespoon lemon juice
  • 8 wholemeal english muffins

Method

Step 1- Burger sauce

  • Put 8 tsp of vegan mayonnaise in a bowl. Squeeze the garlic clove into it and season the whole thing with salt and pepper. Stir well.

Step 2- Toppings

  • Wash and drain the lettuce leaves. 
  • Cut the tomatoes into about 8 slices and set aside.
  • Cut the avocados in half and remove the skin. Then put it in a bowl and mash the avocados with a fork until you have a mash. Then add 1 tablespoon of lemon juice and mix.
  • Cut the eggplants into 8 thick slices and salt them on both sides. After about 10 minutes, the eggplant will release its water, then dab this with a kitchen towel.
  • Lastly, toast the english muffins. 

Step 3- Lay the foundation

  • Spread the avocado cream on the 8 halves of the rolls. Then you can spread the other 8 halves with the garlic mayonnaise.
  • Now just place lettuce and tomatoes on the "avocado cream" side.

Step 4- Grill it

  • Preheat the grill pan/ skillet well and then sear the eggplant slices well on both sides. Then place them on top of the pre-placed buns and place both halves on top of each other.
