Please enjoy avocados consciously, as the ecological footprint is not ideal.
Method
Step 1- Burger sauce
Put 8 tsp of vegan mayonnaise in a bowl. Squeeze the garlic clove into it and season the whole thing with salt and pepper. Stir well.
Step 2- Toppings
Wash and drain the lettuce leaves.
Cut the tomatoes into about 8 slices and set aside.
Cut the avocados in half and remove the skin. Then put it in a bowl and mash the avocados with a fork until you have a mash. Then add 1 tablespoon of lemon juice and mix.
Cut the eggplants into 8 thick slices and salt them on both sides. After about 10 minutes, the eggplant will release its water, then dab this with a kitchen towel.
Lastly, toast the english muffins.
Step 3- Lay the foundation
Spread the avocado cream on the 8 halves of the rolls. Then you can spread the other 8 halves with the garlic mayonnaise.
Now just place lettuce and tomatoes on the "avocado cream" side.
Step 4- Grill it
Preheat the grill pan/ skillet well and then sear the eggplant slices well on both sides. Then place them on top of the pre-placed buns and place both halves on top of each other.
